Early Childhood Education

The program teaches people skills and parenting strategies.  There is a need for qualified day care workers at every level.  Students have the option of working hard to complete the requirements for the CDA Equivalent which qualifies them for a job as a lead teacher in a day care.

One of the best parts of the classes is the hands-on experience.  We have future Colonial High School students at our school now.  We help them learn to play, and get ready for school.

Food Production and Services

The culinary arts program at Colonial High School --Food Production and Services is a job-prep program.  It incorporates skills to use in the food service and hospitality industries.  Many hands-on experiences exist to foster students' creativity and interest in food service; activities include student and teacher luncheons, guest chefs as speakers and demonstrators, preparing both familiar foods and learning about new professional categories, holiday food sales, the Central Florida Fair exhibit and many others.  Emphasis is placed on safety and sanitation and covering state standards.

Food Production and Services is a tech-prep program, a Gold-Seal scholarship program and a Pro-Start program.
